Healthy Banana Cookies
(Healthy Treasures Cookbook)

3 ripe bananas
1 cup raisins
2 cups old-fashioned oats
1/3 cup oil
1 tsp. vanilla
Preheat oven to 350 deg. In a large bowl, mash the bananas, stir in oats, raisins, oil, and vanilla. Mix well and allow to sit for 15 minutes. Drop by teaspoons onto an ungreased cookie sheet. Bake for 15-20 minutes
Makes 2 dozen cookies.
Flavorful variation- substitute applesauce or apple butter in place of oil. Use dried cranberries in place of raisins.
